Instructions

  1. Make the caramel ice cubes (optional but amazing): The night before, pour apple cider into an ice cube tray and freeze.
  2. Prep the glasses: Pour a thin layer of caramel sauce onto a small plate. On another plate, spread out your caramel bits or sprinkles. Dip the rim of each glass into the caramel sauce, then into the caramel bits. Let them sit for a minute to set.
  3. Slice the apples: Cut your apples into thin rounds or wedges. If making ahead, toss them in a little lemon juice to prevent browning. For a spooky look, use a small cookie cutter to cut star or bat shapes out of the apple slices.
  4. Mix the base: In your large pitcher, combine the apple cider, ginger ale, caramel sauce, vanilla extract, cinnamon, and nutmeg. Stir gently with a wooden spoon or whisk until the caramel is fully dissolved. Don’t whisk too hard or you’ll lose the fizz from the ginger ale.
  5. Add the fruit: Drop in the apple slices and dried cranberries. Give it one more gentle stir.
  6. Chill: If not serving immediately, pop the pitcher in the fridge for at least 30 minutes to let the flavors meld.
  7. Serve: Fill each prepared glass with the caramel ice cubes (or regular ice), pour the sangria over the top, and add a gummy worm or plastic spider for garnish. Serve immediately.

Notes

For a dairy-free version, use a coconut-based caramel sauce. For a lower-sugar option, swap the ginger ale for sparkling water and reduce the caramel sauce to 1/2 cup. The vanilla and cinnamon will still carry the flavor beautifully. Don’t skip the caramel ice cubes to prevent dilution. Warm the caramel sauce slightly before adding to the pitcher for easier dissolving. Taste as you go to adjust sweetness.
