A sweet, creamy, and caramel-y iced coffee made with simple ingredients like brown sugar, oat milk, and coffee. Perfect for fall gatherings, this quick and easy recipe uses a clever technique to dissolve brown sugar in warm oat milk for a smooth, indulgent drink.

Ingredients

Scale
  • 3 tablespoons packed brown sugar (light or dark)
  • 1 cup oat milk (barista-style recommended)
  • 1 cup strong brewed coffee (medium or dark roast, double-strength)
  • Ice cubes (large, dense cubes preferred)
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of cinnamon for garnish (optional)

Instructions

  1. Brew 1 cup of strong coffee using a medium or dark roast. Use 2 tablespoons of grounds per 6 ounces of water for double strength. Let cool slightly.
  2. In a small saucepan, combine 1 cup oat milk and 3 tablespoons packed brown sugar. Warm over medium-low heat, whisking constantly, until the sugar is dissolved and the mixture is smooth and slightly thickened (about 2 minutes). Do not boil.
  3. Remove from heat and stir in 1/2 teaspoon vanilla extract if using.
  4. Fill two tall glasses with ice cubes.
  5. Divide the brewed coffee evenly between the two glasses, pouring slowly over the ice.
  6. Pour the warm oat milk mixture over the coffee. Stir well to combine.
  7. Garnish with a pinch of cinnamon if desired. Serve immediately.

Notes

For a crowd, scale up: use 1 cup brown sugar, 4 cups oat milk, 4 cups strong coffee, and 2 teaspoons vanilla. Warm the oat milk mixture in a larger saucepan and set up a self-serve station. The oat milk mixture can be made up to 3 days ahead and stored in the fridge. Use barista-style oat milk for best creaminess and to prevent separation. Do not boil the oat milk as it can become slimy. For a spiced version, add 1/4 teaspoon pumpkin pie spice to the oat milk while warming.
