These soft, fluffy honey butter dinner rolls are budget-friendly, kid-approved, and surprisingly simple to make. Brushed with a honey butter glaze while warm, they have a slightly sticky, caramelized top that’s absolutely irresistible.

Ingredients

Scale
  • 1 cup (240ml) whole milk, warm (about 110°F)
  • 2 ¼ teaspoons (7g) active dry yeast
  • ¼ cup (60ml) honey
  • 4 tablespoons (56g) unsalted butter, melted and slightly cooled
  • 1 large egg, room temperature
  • 1 teaspoon salt
  • 3 ½ cups (440g) all-purpose flour, plus more for dusting
  • 3 tablespoons (42g) unsalted butter, melted (for glaze)
  • 2 tablespoons (30ml) honey (for glaze)
  • Pinch of flaky sea salt (optional)

Instructions

  1. Proof the yeast: In your large mixing bowl, combine the warm milk (about 110°F) and honey. Sprinkle the yeast over the top and let it sit for 5-10 minutes until frothy.
  2. Mix the wet ingredients: Add the melted butter, egg, and salt to the yeast mixture. Whisk until well combined.
  3. Add the flour: Gradually add 3 cups of flour, one cup at a time, stirring with a wooden spoon or dough hook. Add the remaining ½ cup of flour gradually until the dough comes together and pulls away from the sides of the bowl.
  4. Knead the dough: Turn the dough onto a lightly floured surface. Knead for 8-10 minutes by hand, or 5-6 minutes with a stand mixer on medium speed, until smooth and elastic.
  5. First rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let rise in a warm, draft-free place for 1-1.5 hours, or until doubled in size.
  6. Shape the rolls: Punch down the dough, turn onto a lightly floured surface, and divide into 12 equal pieces. Shape each piece into a smooth ball and place in a greased 9×13-inch baking dish, spacing evenly.
  7. Second rise: Cover the rolls and let rise for 30-45 minutes until puffed up and touching each other.
  8. Preheat and bake: Preheat oven to 375°F (190°C). Bake for 18-22 minutes until golden brown and rolls sound hollow when tapped.
  9. Glaze while warm: While rolls bake, mix melted butter and honey for glaze. As soon as rolls come out, brush generously with honey butter mixture. Sprinkle with flaky sea salt if using.
  10. Cool and serve: Let rolls cool in pan for 5-10 minutes, then transfer to a cooling rack. Serve warm or at room temperature.

Notes

Temperature is key: milk should be warm (110°F) not hot. Don’t over-flour the dough; a slightly tacky dough produces fluffier rolls. Room temperature ingredients help the dough rise properly. Brush with glaze twice for extra flavor: once right out of the oven, then again 5 minutes later.
