Ingredients

Scale
  • 2 pounds bone-in, skin-on chicken thighs (or a 3–4 pound whole chicken, cut up)
  • 2 tablespoons olive oil or butter
  • 1 large yellow onion, diced
  • 3 medium carrots, peeled and sliced into rounds
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 2 cups water
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and black pepper to taste (start with 1 teaspoon salt and ½ teaspoon pepper)
  • 8 ounces wide egg noodles
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Prep the Chicken: Pat the chicken thighs dry with paper towels. Season generously on both sides with salt and pepper.
  2. Sear the Chicken: Heat olive oil or butter in a large pot over medium-high heat. Place chicken skin-side down and cook without moving for 5-6 minutes until deep golden brown. Flip and cook for another 3-4 minutes. Transfer chicken to a plate; do not wipe out the pot.
  3. Sauté the Vegetables: Reduce heat to medium. Add onion, carrots, and celery to the pot. Stir and scrape up browned bits. Cook for about 5 minutes until onions are translucent. Add garlic and cook for 30 seconds until fragrant.
  4. Build the Broth: Pour in chicken broth and water. Add dried thyme and bay leaves. Scrape up any remaining bits from the bottom.
  5. Simmer the Chicken: Return seared chicken to the pot along with any juices. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 30 minutes.
  6. Shred the Chicken: Remove chicken from pot and let cool. Discard skin and bones, then shred meat into bite-sized pieces using two forks.
  7. Cook the Noodles: Bring soup back to a gentle boil. Add egg noodles and cook according to package directions (about 6-8 minutes), stirring occasionally.
  8. Finish the Soup: Return shredded chicken to the pot. Taste and adjust seasoning with salt and pepper. Stir in lemon juice if using. Remove bay leaves.
  9. Serve: Ladle soup into bowls and garnish with fresh parsley if desired. Serve hot with crusty bread or crackers.

Notes

For best results, don’t skip searing the chicken—it builds deep flavor. Use low-sodium broth and season at the end to control salt. Simmer gently, don’t boil. For make-ahead, cook noodles separately and add when serving to prevent mushiness. Leftovers keep in the fridge for up to 4 days; freeze without noodles for up to 3 months.
