  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 10-inch cast iron skillet or baking dish generously with butter or non-stick spray.
  2. Open the cinnamon rolls and set aside the icing packets. Cut each cinnamon roll into quarters using a sharp knife or kitchen shears.
  3. In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, pumpkin pie spice, and cinnamon until well combined.
  4. Add the cut cinnamon roll pieces to the bowl. Gently toss them with the pumpkin mixture using a rubber spatula until each piece is evenly coated.
  5. Pour the melted butter over the coated pieces and toss again. If using nuts, sprinkle them in now and give everything one more gentle stir.
  6. Transfer the mixture to your prepared skillet or baking dish. Spread it out evenly, but don’t press down too hard.
  7. Bake for 30-35 minutes, or until the top is golden brown and the bread is cooked through. If the top is browning too quickly, tent it with foil for the last 10 minutes.
  8. Let the monkey bread cool in the pan for 5 minutes. After 5 minutes, place a large plate or serving platter over the skillet and carefully invert it.
  9. Drizzle the reserved icing over the warm monkey bread. Serve warm.
