Ingredients

Scale
  • 3 ยฝ cups all-purpose flour (440g)
  • 1 ยผ cups warm water (300ml, about 110ยฐF)
  • 2 ยผ teaspoons active dry yeast (one packet)
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • ยฝ cup baking soda (for boiling bath)
  • 1 large egg (for egg wash)
  • Coarse sea salt or pretzel salt, for sprinkling
  • 8 oz sharp cheddar cheese, shredded (225g)
  • ยฝ cup beer (120ml, lager or pilsner)
  • 4 oz cream cheese, softened (115g)
  • 1 tablespoon Dijon mustard
  • ยฝ teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper, to taste
  • Fresh chives or parsley, chopped (optional garnish)
  • Extra pretzel salt (optional garnish)
  • Paprika, for dusting (optional garnish)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110ยฐF), sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined, then gradually add remaining 1 ยฝ cups flour. Dough should be soft and slightly sticky.
  3. Knead the dough: Turn onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. Alternatively, use a stand mixer with dough hook on medium-low for 4-5 minutes.
  4. First rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour until doubled in size.
  5. Shape the bites: Punch down dough and divide into 4 equal pieces. Roll each into a 12-inch long rope, 1 inch thick. Cut into 1-inch pieces (about 12-15 per rope).
  6. Boil the pretzel bites: Preheat oven to 425ยฐF (220ยฐC). Bring 8 cups water to a boil in a large pot. Carefully add baking soda (it will bubble). Boil bites in batches of 8-10 for 30-45 seconds. Transfer to a parchment-lined baking sheet with a slotted spoon.
  7. Egg wash and salt: Beat egg with 1 tablespoon water. Brush each bite with egg wash and sprinkle generously with coarse sea salt.
  8. Bake: Bake for 12-15 minutes until deep golden brown and crispy, rotating pan halfway through.
  9. Make the beer cheese dip: In a small saucepan over medium-low heat, combine beer and cream cheese. Whisk until smooth. Gradually add shredded cheddar, whisking constantly until melted. Stir in Dijon mustard, garlic powder, and Worcestershire sauce. Season with salt and pepper. Keep warm over low heat.
  10. Serve immediately: Transfer pretzel bites to a serving platter. Pour dip into a small bowl or cast iron skillet. Garnish with fresh chives or parsley if desired. Serve warm.

Notes

Don’t skip the boiling stepโ€”it gives pretzels their signature flavor and chewy texture. Boil for exactly 30-45 seconds. Keep the dip warm over low heat; if it thickens, add a splash of warm beer or milk. For make-ahead, prepare through boiling step up to 24 hours in advance, refrigerate, then brush with egg wash and bake when ready.
