  • 1.5 lbs boneless, skinless chicken breasts (about 23 breasts, cut into 1-inch cubes)
  • 1 cup buttermilk
  • 1.5 cups panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or oil mister
  • 1/2 cup Frank’s RedHot Original Sauce
  • 1/4 cup unsalted butter (melted)
  • 1 tablespoon honey (optional)
  • 1/2 teaspoon Worcestershire sauce
  • Ranch or blue cheese dressing (for serving)
  • Celery and carrot sticks (for serving)
  • Fresh parsley or chives (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack inside a rimmed baking sheet and spray it lightly with cooking spray.
  2. Cut the chicken into uniform pieces. Pat the chicken breasts dry with paper towels, then cut them into 1-inch cubes.
  3. Set up your dredging station. In one shallow bowl, pour the buttermilk. In another bowl, whisk together the panko breadcrumbs, flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Dip each piece of chicken into the buttermilk. Let the excess drip off. Let the chicken sit in the buttermilk for about 5 minutes if you have time.
  5. Coat the chicken in the panko mixture. Press the coating firmly onto each piece. Place the coated pieces on the prepared wire rack, leaving a little space between each one.
  6. Spray the coated chicken with cooking spray.
  7. Bake for 18-22 minutes. After 10 minutes, rotate the baking sheet for even browning. The chicken is done when it reaches an internal temperature of 165°F (74°C) and the coating is golden brown and crispy.
  8. While the chicken bakes, make the buffalo sauce. In a microwave-safe bowl or small saucepan, melt the butter. Whisk in the Frank’s RedHot, honey (if using), and Worcestershire sauce. Keep it warm.
  9. Toss the baked bites in sauce. Transfer the hot chicken to a large bowl, pour the buffalo sauce over the top, and toss gently with tongs until every piece is coated.
  10. Serve immediately. Transfer to a serving platter, garnish with chopped parsley or chives, and serve with ranch or blue cheese dressing and celery sticks on the side.

Notes

For extra crunch, double-coat the chicken: after buttermilk dip, coat in flour, dip back in buttermilk, then coat in panko. Let the coated chicken rest for 5-10 minutes before baking to help the coating adhere. If making ahead, keep the sauce separate and toss just before serving to maintain crispiness.
