  • 2 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 1 1/2 cups (190g) all-purpose flour

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup (150g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 cup (170g) semi-sweet or dark chocolate chips

Instructions

  1. Preheat oven to 425°F (220°C) and place a rack in the upper third of the oven.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg.
  3. In a separate medium bowl, whisk the melted butter, pumpkin puree, eggs, vanilla extract, brown sugar, and granulated sugar until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula until just combined; the batter should be thick and lumpy.
  5. Gently fold in the chocolate chips, reserving a small handful for topping.
  6. Divide the batter evenly among 12 muffin cups, filling them almost to the top, and sprinkle with reserved chocolate chips.
  7. Bake at 425°F (220°C) for 15-18 minutes, until tops are golden brown and cracked, and a toothpick inserted comes out with moist crumbs.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not use pumpkin pie filling; use 100% pure pumpkin. Measure flour by spooning it into the cup and leveling it off to avoid dry muffins. Do not overmix the batter to maintain chewiness. For extra chew, add 1 tablespoon of cornstarch to dry ingredients. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
