  • 1 cup sour cream (full-fat recommended)
  • 1 cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 2 cups shredded sharp cheddar cheese (shred your own for best texture)
  • 1 cup shredded Monterey Jack cheese
  • 1 packet (1 oz) ranch seasoning mix (Hidden Valley recommended)
  • 1 lb thick-cut bacon (about 1012 slices)
  • 1 tablespoon brown sugar (optional)
  • Tortilla chips, for serving
  • Fresh vegetables (celery sticks, carrot sticks, bell pepper strips), for serving
  • Pretzel bites or bread cubes, for serving

Instructions

  1. Cook the bacon: Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Lay bacon slices in a single layer on the rack. If using brown sugar, sprinkle a tiny pinch over each slice. Bake for 18-22 minutes until crispy and deep golden brown. Let cool on rack for 5 minutes, then crumble into small pieces. Set aside about ¼ cup for topping.
  2. Soften the cream cheese: While bacon cooks, take cream cheese out of fridge and cut into cubes. Let sit at room temperature for at least 20 minutes.
  3. Mix the base: In a medium bowl, combine softened cream cheese, sour cream, mayonnaise, and ranch seasoning packet. Stir until smooth and fully combined.
  4. Add the cheeses: Fold in 1½ cups of shredded cheddar and all of the Monterey Jack cheese. Reserve remaining ½ cup cheddar for topping. Mix until evenly distributed.
  5. Transfer to slow cooker: Scrape mixture into a 3-4 quart slow cooker and spread into an even layer. Sprinkle reserved cheddar on top. Add about half of the crumbled bacon (save rest for garnish).
  6. Cook low and slow: Cover and cook on LOW for 2 hours, or on HIGH for 1 hour. Do not lift lid during first hour. Dip is ready when hot all the way through, bubbly around edges, and cheese on top is fully melted.
  7. Finish and serve: Sprinkle remaining crumbled bacon on top. Optionally add fresh chopped chives or green onions. Switch slow cooker to WARM setting and serve directly from cooker with chips, vegetables, and pretzels.

Notes

Let cream cheese soften to room temperature for smooth melting. Shred your own cheese to avoid anti-caking agents that cause graininess. Keep most bacon for topping to maintain crunch. If dip thickens as it sits, stir in a tablespoon of milk or cream. For a lighter version, use reduced-fat cream cheese, Greek yogurt instead of sour cream, light mayonnaise, and turkey bacon.
