  • 1/2 cup (120ml) buffalo hot sauce (e.g., Frank’s RedHot Original)
  • 2 tablespoons (28g) unsalted butter, melted
  • Optional: 1 tablespoon honey or maple syrup

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Wash the cauliflower head and cut it into bite-sized florets (about 1 to 1.5 inches wide). Pat them dry with a clean kitchen towel.
  3. In a large mixing bowl, whisk together the flour, milk, garlic powder, onion powder, salt, and pepper until smooth (batter should be thick but pourable, like pancake batter).
  4. Add the cauliflower florets to the batter and toss gently until each piece is evenly coated. Let any excess batter drip off before placing on the prepared baking sheet.
  5. Arrange the coated florets in a single layer on the baking sheet, making sure they are not touching.
  6. Bake for 20 minutes. At the 10-minute mark, flip each floret with a spatula to ensure even cooking.
  7. While the cauliflower bakes, whisk together the buffalo hot sauce and melted butter in a small bowl. If using honey or maple syrup, add it now.
  8. After 20 minutes, remove the baking sheet from the oven. Using a pastry brush or spoon, generously brush each floret with the buffalo sauce on both sides.
  9. Return the baking sheet to the oven and bake for an additional 5-7 minutes, until the sauce is bubbly and the edges are deep golden brown.
