A refreshing and bright lemonade pitcher infused with fresh mint, perfect for quick and easy summer gatherings. This non-alcoholic twist on a mint julep combines tart lemon juice, sparkling water, and a touch of sweetness for a crowd-pleasing drink.

Ingredients

Scale
  • 6 medium fresh lemons (for about 1 cup fresh lemon juice)
  • 1 cup loosely packed fresh mint leaves
  • 3/4 cup granulated sugar
  • 4 cups cold water (for diluting lemon syrup)
  • 4 cups sparkling water or club soda
  • Ice cubes (as needed)
  • Lemon slices and mint sprigs for garnish

Instructions

  1. Roll each lemon on the counter with your palm to loosen juices. Cut in half and juice until you have about 1 cup (240 ml) of fresh lemon juice (about 5 minutes).
  2. In a small saucepan, combine 3/4 cup (150 g) granulated sugar with 1 cup (240 ml) cold water. Warm over medium heat, stirring until sugar dissolves completely. Remove from heat and let cool slightly. (Alternatively, stir sugar directly into lemon juice and water if short on time.)
  3. Place fresh mint leaves in the bottom of a 2-quart pitcher. Using a muddler or wooden spoon, gently press down on the leaves about 10-15 times to release aroma without shredding.
  4. Pour the cooled lemon syrup and freshly squeezed lemon juice into the pitcher with the muddled mint. Add 3 cups (720 ml) cold water and stir gently to mix flavors.
  5. Add ice cubes to fill the pitcher about halfway. Just before serving, slowly pour 4 cups (960 ml) sparkling water or club soda into the pitcher. Stir gently to combine while keeping the fizz intact.
  6. Garnish with lemon slices and fresh mint sprigs. Serve immediately with plenty of ice in each glass.

Notes

Muddle mint gently to release oils without bitterness. Use fresh lemon juice for best flavor. Warm sugar with water to dissolve fully for a smooth syrup. Add sparkling water last to keep fizz fresh. Can prepare lemon syrup and mint mixture ahead and add sparkling water before serving. For adult version, add 1 to 1 1/2 cups bourbon. Variations include swapping mint with basil or thyme, or adding fresh berries.
