  • 3 tablespoons honey
  • 2 chipotle peppers in adobo sauce, minced

  • 1 tablespoon fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • Wooden or metal skewers (wooden skewers should be soaked in water for 30 minutes before use)

Instructions

  1. In a medium mixing bowl, combine honey, minced chipotle peppers with adobo sauce, minced garlic, lime juice, olive oil, ground cumin, salt, and pepper. Whisk until well blended (about 5 minutes).
  2. Cut chicken breasts into roughly 1-inch cubes, keeping pieces uniform for even cooking (7-10 minutes).
  3. Add chicken pieces to the marinade, stirring gently to coat thoroughly. Cover and refrigerate for at least 15 minutes, up to 1 hour (do not exceed 2 hours).
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  5. Thread the marinated chicken pieces onto the skewers, leaving space between pieces for heat circulation (about 5 minutes).
  6. Preheat grill to medium-high heat (about 400°F / 200°C).
  7. Grill skewers for 3-4 minutes per side, turning carefully with tongs. Brush with leftover marinade once or twice during grilling for extra glaze. Cook until internal temperature reaches 165°F (74°C) and edges are caramelized.
  8. Remove skewers from grill and let rest a few minutes before serving. Serve warm with lime wedges.
