Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine lemon zest, lemon juice, minced garlic, olive oil, dried oregano, fresh thyme leaves, salt, and pepper. Whisk well until blended.
  3. Add chicken thighs to the bowl and toss to coat evenly with the marinade. Let sit for about 5 minutes while prepping veggies.
  4. Arrange chicken thighs on one side of a sheet pan, spacing them out evenly.
  5. Toss trimmed asparagus, cherry tomatoes, and red onion wedges lightly with any leftover marinade and spread on the other side of the pan.
  6. Roast in the oven for 15 minutes, flipping the chicken and stirring the veggies halfway through cooking.
  7. Check that chicken reaches an internal temperature of 165°F (74°C) or juices run clear when cut.
  8. Remove from oven and let rest for 5 minutes to redistribute juices.
  9. Serve warm with a fresh wedge of lemon if desired.
