Instructions

  1. In a large bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, chopped herbs, salt, pepper, and red pepper flakes if using.
  2. Trim any fat and cut chicken into 1-inch pieces.
  3. Toss chicken pieces in the marinade, cover, and refrigerate for at least 15 minutes, up to 1 hour.
  4. Soak wooden skewers in water for 20 minutes if using. Chop vegetables into similar-sized chunks if using.
  5. Alternate threading chicken pieces and vegetables onto skewers, leaving space between pieces.
  6. Preheat grill or grill pan to medium-high heat.
  7. Cook skewers for 5-6 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
  8. Let skewers rest for 5 minutes before serving.
