Fresh Watermelon Cucumber Salad with Tajín and Lime

A light, refreshing, and tangy summer salad combining juicy watermelon, crisp cucumber, zesty lime, and spicy Tajín seasoning. Perfect for hot afternoons, BBQs, or as a healthy snack.

  • 4 cups seedless watermelon, cut into bite-sized cubes (about 600g)
  • 2 medium cucumbers, peeled and diced (about 300g)
  • Juice of 2 fresh limes
  • 2 teaspoons Tajín seasoning
  • 1/4 cup fresh mint leaves, roughly chopped (about 10g) – optional
  • 1 tablespoon extra virgin olive oil
  • Sea salt to taste (start with 1/4 teaspoon)

Instructions

  1. Cut the watermelon into 1-inch bite-sized cubes, removing any seeds if necessary.
  2. Peel the cucumbers if the skin is thick or waxed, then slice lengthwise and chop into pieces similar in size to the watermelon cubes.
  3. Roughly chop the fresh mint leaves.
  4. In a large mixing bowl, combine the watermelon, cucumber, and mint.
  5. Sprinkle 2 teaspoons of Tajín seasoning evenly over the mixture.
  6. Squeeze the juice of 2 fresh limes over the salad.
  7. Drizzle 1 tablespoon of extra virgin olive oil over the salad.
  8. Gently toss everything together until well coated but not crushed.
  9. Add sea salt to taste, starting with 1/4 teaspoon and adjusting as needed.
  10. Optional: Cover and refrigerate the salad for 15-20 minutes before serving to allow flavors to meld.

Notes

Use ripe but firm watermelon to avoid mushy texture. Use English or Persian cucumbers for best texture. Toss gently to keep watermelon cubes intact. Adjust seasoning gradually. For best flavor, chill salad before serving but do not refrigerate too long to avoid soggy cucumbers. If watermelon is watery, drain excess liquid before mixing.
