  • Rustic artisan bread (like sourdough or country loaf), sliced about ¾ inch thick
  • Unsalted butter or olive oil (for toasting)
  • ½ cup (120g) whole milk ricotta cheese
  • 1 teaspoon honey
  • Zest of half a lemon
  • Pinch of sea salt
  • 1 cup (150g) fresh strawberries, hulled and thinly sliced
  • Fresh basil leaves, torn
  • Freshly cracked black pepper
  • Optional: toasted sliced almonds or chopped pistachios
  • Optional: additional honey for drizzling

Instructions

  1. In a small bowl, combine ½ cup (120g) whole milk ricotta, 1 teaspoon honey, the zest of half a lemon, and a pinch of sea salt. Stir gently until smooth and creamy. Taste and adjust honey or salt if needed.
  2. Heat your grill pan or skillet over medium heat. Lightly butter one side of each bread slice or brush with olive oil. Place the bread buttered side down on the pan. Toast for 2-3 minutes until golden and crisp, then flip and toast the other side for another 2 minutes.
  3. While the bread toasts, hull and thinly slice about 1 cup (150g) fresh strawberries. Tear a few fresh basil leaves into small pieces. Set aside.
  4. Spread a generous 2 tablespoons of the ricotta mixture evenly over each warm toast slice. Top with sliced strawberries, then scatter torn basil leaves on top.
  5. Lightly grind fresh black pepper over the top and drizzle a little extra honey if desired. Add nuts if using for extra crunch and texture.
  6. Serve immediately while the toast is still warm and crisp.

Notes

If ricotta seems watery, drain it lightly in a fine mesh sieve for 10 minutes before mixing. Use rustic artisan bread for best texture. Add black pepper for a subtle warmth that enhances flavor. Assemble toast just before serving to keep it crisp.
