  • 2 avocados, sliced or mashed
  • 1 cup sour cream or Greek yogurt
  • 1 cup salsa (mild or spicy)
  • 1 lime, cut into wedges

  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels (frozen or fresh, lightly sautéed)
  • Pickled jalapeños

Instructions

  1. Prep your toppings first (10 minutes): Wash and chop lettuce, dice tomatoes and onions, chop cilantro, slice avocados, and cut lime wedges. Arrange these in serving bowls.
  2. Brown the meat (8 minutes): Heat 2 tablespoons olive oil over medium-high heat in a large skillet. Add 3 pounds ground beef or turkey and cook, breaking it up, until no pink remains and meat is browned.
  3. Season the meat (2 minutes): Sprinkle 2 tablespoons taco seasoning over the meat. Pour in 1/2 cup water, stir, and simmer for 2 minutes to thicken and absorb flavors.
  4. Warm tortillas (5 minutes): Warm tortillas in a 200°F oven wrapped in foil or heat on a dry griddle until pliable. Keep wrapped in a clean towel to stay warm.
  5. Set up your taco bar: Arrange meat, tortillas, cheese, veggies, and toppings on a table or counter with serving spoons and napkins.
