These quick and easy rotisserie chicken sliders come together in just 20 minutes, making them perfect for last-minute gatherings or busy weeknights. Packed with tender chicken, tangy BBQ sauce, crunchy slaw, and pickles, they are a crowd-pleasing party snack.

Ingredients

Scale
  • 3 cups shredded rotisserie chicken (about 450 grams)
  • 12 small slider buns, soft but sturdy
  • ½ cup BBQ sauce (smoky and slightly sweet recommended)
  • 2 cups coleslaw mix (shredded cabbage and carrots)
  • ¼ cup mayonnaise (or Greek yogurt for tangier slaw)
  • 1 tablespoon apple cider vinegar
  • 12 slices dill pickles
  • Salt and pepper to taste
  • Optional: pinch of smoked paprika or chili powder

Instructions

  1. Remove skin and bones from rotisserie chicken and shred meat into bite-sized pieces (about 3 cups).
  2. In a mixing bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, salt, and pepper. Toss to coat evenly.
  3. Add BBQ sauce to shredded chicken and stir gently to combine without mashing.
  4. Slice slider buns horizontally if not pre-sliced. Lightly toast buns on a skillet or in the oven for about 2 minutes until golden and warm.
  5. Assemble sliders by placing a spoonful of BBQ chicken on the bottom bun, adding a layer of slaw, topping with a pickle slice, then finishing with the top bun. Repeat for all 12 sliders.
  6. Serve immediately or cover loosely with foil to keep warm for up to 15 minutes.

Notes

Avoid overdressing the chicken with BBQ sauce to prevent soggy buns. Toasting buns adds a subtle crunch and helps hold the filling. Slaw can be adjusted for creaminess or tanginess by varying mayo and vinegar. For faster shredding, pulse chicken gently in a food processor without pureeing.
