  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and pepper to taste

Instructions

  1. Place 6 eggs in a microwave-safe bowl and cover completely with water. Cover the bowl with a microwave-safe plate or lid to avoid splatters.
  2. Microwave on high for 8 minutes, then check if cooked (the water should be boiling). If not done, microwave in 30-second bursts until eggs are hard-boiled.
  3. Carefully drain hot water and place eggs in ice water or cold tap water for 5 minutes to cool and stop cooking.
  4. Tap each egg gently on the counter to crack the shell and peel under running water if possible.
  5. Slice each egg in half lengthwise. Gently scoop out yolks into a small bowl. Set egg whites aside.
  6. Mash yolks with a fork until crumbly. Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper. Mix well until smooth and creamy. Adjust seasoning to taste.
  7. Spoon or pipe the yolk mixture back into the egg whites evenly.
  8. Optionally, garnish with smoked paprika, chopped chives, or a few drops of hot sauce. Serve immediately or chill for later.
