Instructions

  1. Peel and grate the russet potatoes using a box grater or food processor (about 5 minutes).
  2. Place grated potatoes in a clean kitchen towel or paper towels and squeeze firmly to remove excess moisture (2-3 minutes).
  3. In a large bowl, combine the drained grated potatoes with diced shallot, chopped smoked salmon, and fresh dill. Season with salt and pepper and stir gently to combine.
  4. Heat a 10-inch non-stick or cast iron skillet over medium heat. Melt butter with olive oil until butter foams and starts to brown (about 2 minutes).
  5. Scoop the potato and salmon mixture into the skillet, pressing down gently to form a 1/2-inch thick even layer. Cook undisturbed for 6-8 minutes until the bottom is deep golden brown and crisp.
  6. Carefully flip the hash browns in sections or whole and cook the other side for 5-7 minutes until crisp and cooked through.
  7. Transfer to a serving plate, squeeze fresh lemon juice over the top, and garnish with extra dill or a dollop of crème fraîche if desired. Serve immediately.
