A quick and easy snack featuring crispy corn ribs seasoned with smoky Tajín butter, ready in just 15 minutes. Perfectly crunchy on the outside and tender inside, this recipe is a flavorful treat for any occasion.

  • 2 ears fresh corn on the cob, husked and cut into quarters lengthwise
  • 3 tablespoons unsalted butter, melted
  • 2 teaspoons Tajín seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder (optional)
  • Salt to taste (sea salt flakes recommended)
  • 1 teaspoon fresh lime juice (optional)

Instructions

  1. Husk the fresh corn and rinse under cold water. Using a sharp knife, carefully cut each ear into 4 long quarters lengthwise to create rib-shaped pieces. (About 5 minutes)
  2. In a mixing bowl, melt 3 tablespoons of unsalted butter. Stir in 2 teaspoons of Tajín seasoning, 1/2 teaspoon smoked paprika, 1/4 teaspoon garlic powder, and a pinch of salt. Mix well until combined. Add 1 teaspoon of fresh lime juice if desired. (2 minutes)
  3. Using a basting brush, generously brush the seasoned butter over each corn rib, making sure to coat all crevices. (3 minutes)
  4. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  5. Place the corn ribs in a single layer inside the air fryer basket without overlapping. Cook for 10 minutes, flipping halfway through with kitchen tongs to ensure even browning. The ribs should be golden brown and crispy on the edges but tender inside.
  6. Once cooked, brush with any leftover Tajín butter and sprinkle extra Tajín or sea salt flakes for added crunch and zing. Serve immediately, ideally with lime wedges.

Notes

If you don’t have an air fryer, you can broil the corn ribs on a baking sheet for 8-10 minutes, flipping halfway through. For a dairy-free option, substitute butter with melted coconut oil or plant-based spread. Avoid overcrowding the air fryer basket to ensure crispiness. Reheat leftovers in the air fryer at 350°F for 3-4 minutes to restore crunch.
