  • 4 oz (115 g) softened cream cheese
  • 3 tablespoons olive oil, plus extra for roasting
  • 2 cups (300 g) cherry or grape tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon chopped fresh basil or thyme (optional)
  • Salt and pepper to taste
  • Honey or balsamic glaze for drizzling (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. In a bowl, toss the halved cherry tomatoes with 1 tablespoon olive oil, minced garlic, salt, and pepper. Spread them evenly on the baking sheet.
  3. Roast the tomatoes in the oven for about 20-25 minutes until soft, slightly caramelized, and juicy. Watch closely in the last 5 minutes to avoid burning.
  4. While tomatoes roast, combine crumbled feta, softened cream cheese, remaining 2 tablespoons olive oil, and lemon juice in a food processor. Blend until smooth and creamy, about 1-2 minutes, scraping down sides as needed.
  5. Taste and season the whipped feta with salt and pepper if necessary. Add half the fresh herbs and pulse briefly to combine.
  6. Remove roasted tomatoes from oven and let cool slightly for about 5 minutes to prevent melting the whipped feta when combined.
  7. Spoon whipped feta onto a serving dish or individual plates, top generously with roasted tomatoes, sprinkle remaining herbs on top, and drizzle with honey or balsamic glaze if desired.
  8. Serve with toasted baguette slices, crackers, or fresh vegetable sticks for dipping.

Notes

Use softened cream cheese for easier blending. Watch tomatoes closely to avoid burning. If whipped feta is too thick, add a teaspoon of water or olive oil to loosen. For dairy-free option, substitute feta and cream cheese with silken tofu blended with nutritional yeast and lemon juice.
