A refreshing and festive alcohol-free mocktail featuring tangy hibiscus tea, fresh lime juice, and a subtle kick of ginger. Perfect for parties and easy to scale for any crowd.

Ingredients

Scale
  • 1 cup (30g) dried hibiscus flowers
  • 6 cups (1.4 liters) filtered water
  • ½ cup (120ml) fresh lime juice (about 45 limes)
  • 1-inch piece fresh ginger, peeled and thinly sliced
  • ½ cup (100g) granulated sugar or ⅓ cup (80ml) agave syrup
  • Optional garnishes: lime wedges, fresh ginger slices, mint leaves

Instructions

  1. Bring 6 cups (1.4 liters) of filtered water to a rolling boil in a large pot (about 5 minutes).
  2. Remove the pot from heat and add 1 cup (30g) dried hibiscus flowers and thinly sliced 1-inch ginger piece. Cover and let steep for 15 minutes until the water turns deep ruby red.
  3. Strain the hibiscus and ginger out into a large pitcher using a fine mesh strainer or cheesecloth. Press the flowers gently with the back of a spoon to extract extra flavor. Discard solids.
  4. While the tea is still warm, stir in ½ cup (100g) granulated sugar or ⅓ cup (80ml) agave syrup until fully dissolved. Taste and adjust sweetness as desired.
  5. Juice 4-5 fresh limes to get about ½ cup (120ml) fresh lime juice. Add to the pitcher and stir well to balance the tartness.
  6. Refrigerate the mocktail until cold, at least 1 hour. If short on time, add ice cubes but chilling enhances flavor.
  7. Serve over ice in glasses and garnish with lime wedges, fresh ginger slices, and optional mint leaves.

Notes

Brew the hibiscus tea base ahead of time and keep chilled for easy party prep. Adjust sweetness to taste. For stronger ginger flavor, add extra ginger slices while chilling. Store leftovers in a sealed pitcher in the fridge for up to 3 days and stir before serving. Use fresh lime juice only for best flavor. To make sparkling, add club soda or sparkling water before serving.
